1.5 lbs boneless, skinless chicken thighs

1 cup fresh pineapple, cut into chunks

1 cup bell peppers (red, yellow, and green), sliced

1 medium red onion, sliced

4 cloves garlic, minced

1/4 cup soy sauce

1/4 cup honey or maple syrup

2 tablespoons olive oil

1 tablespoon rice vinegar

1 teaspoon ground ginger

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 green onions, sliced for garnish

Sesame seeds, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a bowl, whisk together the soy sauce, honey or maple syrup, olive oil, rice vinegar, minced garlic, ground ginger, and red pepper flakes (if using).

      Marinate the Chicken: Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Ensure each piece is well-coated. Let it marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

        Arrange on the Sheet Pan: After marinating, remove the chicken from the fridge. Place the marinated chicken on one side of the prepared baking sheet. On the other side, arrange the pineapple chunks, bell pepper slices, and red onion.

          Season the Vegetables: Drizzle the vegetables with a little olive oil and season with salt and pepper. Toss them gently to coat.

            Bake: Transfer the sheet pan to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the vegetables are tender.

              Garnish and Serve: Remove the sheet pan from the oven and let it rest for a few minutes. Sprinkle the chicken and vegetables with sliced green onions and sesame seeds before serving.
