Ingredients
  

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

4 large eggs

1 cup vegetable oil

2 cups grated carrots

1 cup crushed pineapple (drained)

1/2 cup chopped pecans or walnuts (optional)

1 teaspoon vanilla extract

Cream cheese frosting (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, and salt. Mix well.

      In another bowl, whisk together the eggs and vegetable oil until combined.

        Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

          Fold in the grated carrots, crushed pineapple, chopped nuts (if using), and vanilla extract until evenly distributed.

            Divide the batter evenly between the two prepared cake pans.

              Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

                  Once cooled, frost the top of one cake layer with cream cheese frosting, place the second layer on top, and frost the top and sides of the cake.

                    Decorate as desired, perhaps with additional crushed pineapple or chopped nuts.
