Ingredients
  

1 package (30 oz) frozen hashbrowns, thawed

1 cup shredded cheddar cheese

1 cup cooked bacon or sausage, crumbled

6 large eggs

1 cup milk

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chopped onion

1/2 cup bell peppers, diced

Optional: chopped green onions for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the thawed hashbrowns, half of the cheddar cheese, cooked bacon or sausage, chopped onion, and bell peppers.

      In a separate bowl, whisk together the eggs, milk, salt, and pepper until well blended.

        Pour the egg mixture over the hashbrown mixture and stir until everything is evenly coated.

          Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.

            Sprinkle the remaining cheddar cheese on top.

              Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the cheese is bubbly and golden brown.

                Let it cool for a few minutes before garnishing with chopped green onions if desired.

                  Serve warm and enjoy your comforting breakfast casserole!
