For the Cake:

1 cup (240ml) Guinness stout

1 cup (230g) unsalted butter, plus extra for greasing

3/4 cup (60g) unsweetened cocoa powder

2 cups (400g) granulated sugar

1 1/2 cups (180g) all-purpose flour

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 large eggs

2/3 cup (160ml) sour cream

1 tsp pure vanilla extract

For the Irish Buttercream:

1 cup (230g) unsalted butter, softened

4 cups (480g) powdered sugar

1/4 cup (60ml) heavy cream

1 tsp pure vanilla extract

2 tbsp Irish whiskey (optional)

Instructions
 

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and line the bottom of two 9-inch round cake pans with parchment paper.

      - In a medium saucepan, combine the Guinness and unsalted butter. Heat over medium until the butter is melted. Remove from heat and whisk in cocoa powder until smooth.

        Mix Dry Ingredients:

          - In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt. Set aside.

            Combine Wet Ingredients:

              - In another bowl, whisk together the eggs, sour cream, and vanilla extract. Pour in the Guinness and butter mixture and whisk until well combined.

                Combine Wet and Dry:

                  - Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined (do not overmix).

                    Bake:

                      - Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

                        Prepare the Buttercream:

                          - In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add powdered sugar, mixing until combined and fluffy.
