Ingredients
  

1 pound ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 bell pepper (red or yellow), chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

1 cup baby spinach

Optional: fresh parsley or cilantro for garnish

Instructions
 

Heat the olive oil in a large skillet over medium heat.

    Add the diced sweet potatoes to the skillet, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they start to soften.

      Add the chopped onion and bell pepper to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.

        Stir in the minced garlic, smoked paprika, and cumin. Cook for another minute until fragrant.

          Push the sweet potato mixture to the side of the skillet and add the ground turkey. Cook the turkey until browned and fully cooked, breaking it apart as it cooks, about 6-8 minutes.

            Once the turkey is cooked through, mix everything together in the skillet. Add in the baby spinach and cook until wilted, about 2 minutes.

              Taste and adjust the seasoning with more salt and pepper if needed. Remove from heat.

                Serve warm, garnished with fresh parsley or cilantro if desired.
