Ingredients
  

4 boneless, skinless chicken breasts

1 cup spinach, chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon Tony Chachere's Original Creole Seasoning

1 tablespoon olive oil

1/2 cup heavy cream

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Prepare the Stuffing: In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, and half of the Tony Chachere's seasoning. Mix until well blended.

    Prepare the Chicken Breasts: Pat the chicken breasts dry with paper towels. Use a sharp knife to carefully create a pocket in each breast by slicing horizontally without cutting all the way through.

      Stuff the Chicken: Spoon an equal amount of the spinach and cheese mixture into each chicken breast pocket. Secure the opening with toothpicks if necessary.

        Season the Chicken: Rub the outside of the stuffed chicken breasts with olive oil and sprinkle with the remaining Tony Chachere's seasoning, garlic powder, salt, and pepper.

          Grill the Chicken: Preheat your grill to medium-high heat. Place the stuffed chicken breasts on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

            Prepare the Cream Sauce: While the chicken is grilling, in a small saucepan over medium heat, combine the heavy cream, remaining seasoning, garlic powder, and salt and pepper. Stir gently and let it simmer for about 5 minutes until it slightly thickens.

              Serve: Remove the chicken from the grill and let it rest for 5 minutes. Remove toothpicks, if used. Slice and serve the grilled stuffed chicken with a drizzle of cream sauce on top and garnish with fresh parsley.
