1 pound boneless, skinless chicken breasts

Juice of 2 lemons

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon dried thyme

Salt and pepper to taste

Skewers (soaked in water if wooden)

Fresh parsley, for garnish

Instructions
 

Start by cutting the chicken breasts into bite-sized cubes and place them in a large mixing bowl.

    In a separate bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper.

      Pour the marinade over the chicken, ensuring all pieces are well coated. You can let it marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.

        Preheat your grill over medium-high heat.

          Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

            Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.

              Garnish with fresh parsley before serving.
