1 cup cherry tomatoes

¼ cup BBQ sauce

Skewers (wooden or metal)

4 salmon fillets

2 tablespoons olive oil

Juice of 1 lemon

2 tablespoons fresh parsley, chopped

1 garlic clove, minced

Salt and pepper to taste

1 zucchini, sliced

1 bell pepper, sliced

1 onion, sliced

1 cup corn kernels (fresh or frozen)

1 tablespoon olive oil

8 corn tortillas

Salt and pepper to taste

Optional toppings: avocado, salsa, cilantro

1 lb shrimp, peeled and deveined

1 cup pineapple chunks

2 tablespoons teriyaki sauce

Skewers (wooden or metal)

4 large portobello mushroom caps

¼ cup balsamic vinegar

2 tablespoons olive oil

4 burger buns

Lettuce, tomato, and onion for toppings

Salt and pepper to taste

Instructions
 

Preheat the grill to medium-high heat.

    Soak wooden skewers in water for 30 minutes if using.

      Thread chicken and vegetables onto skewers, alternating as desired.

        Brush or drizzle with BBQ sauce.

          Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until chicken is cooked through.
