Ingredients
  

1 lb chicken breast, diced

4 cups chicken broth

1 medium onion, finely chopped

2 carrots, sliced

2 celery stalks, chopped

1 cup uncooked orzo pasta

3 large eggs

1/4 cup freshly squeezed lemon juice

1 tbsp dried dill

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery, then sauté until softened.

    Add the diced chicken to the pot and cook until browned.

      Pour in the chicken broth and bring to a boil. Stir in the orzo pasta and reduce heat to a simmer.

        In a mixing bowl, whisk together the eggs and lemon juice until well combined. Gradually add a ladle of hot soup broth into the egg mixture while whisking to temper the eggs.

          Stir the egg mixture back into the soup pot. Add dried dill, salt, and pepper to taste. Cook for a few more minutes until the orzo is tender.

            Serve hot, garnished with fresh parsley.
