For the Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped red onion

3 cloves garlic, minced

1/4 cup feta cheese, crumbled

1/4 cup chopped fresh parsley

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1 egg, lightly beaten

Zest of 1 lemon

Olive oil for frying

For the Lemon Orzo:

1 cup orzo pasta

2 cups low-sodium chicken broth

1 tbsp olive oil

Juice of 1 lemon

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, sliced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Instructions
 

Prepare the Chicken Meatballs:

    - In a large bowl, combine the ground chicken, breadcrumbs, red onion, garlic, feta cheese, parsley, oregano, salt, black pepper, egg, and lemon zest. Mix until all ingredients are well combined.

      - Form the mixture into 1.5-inch meatballs and set them aside on a baking sheet.

        Cook the Meatballs:

          - Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches to avoid overcrowding. Cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. Transfer to a plate and set aside.

            Make the Lemon Orzo:

              - In a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain any excess liquid if necessary.

                - Stir in the olive oil, lemon juice, cherry tomatoes, Kalamata olives, and parsley. Season with salt and pepper to taste.

                  Serve:

                    - In a serving bowl, place a generous portion of lemon orzo, and top with the Greek chicken meatballs. Garnish with additional parsley and a wedge of lemon if desired.
