Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cooked quinoa or rice

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

Kalamata olives, pitted (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your grill or stovetop pan over medium heat.

    In a small bowl, mix the olive oil, oregano, garlic powder, salt, and pepper.

      Rub the spice mixture over the chicken breasts, ensuring they are well-coated.

        Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove and let rest for a few minutes before slicing.

          In a large bowl, layer the quinoa or rice at the bottom, followed by the diced cucumber, cherry tomatoes, sliced red onion, and crumbled feta.

            Add the sliced chicken on top and scatter Kalamata olives if desired.
