2 boneless, skinless chicken breasts

1 cup buttermilk

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper, to taste

1 cup all-purpose flour

½ teaspoon baking powder

½ teaspoon cayenne pepper

Vegetable oil, for frying

4 brioche buns

4 slices of aged cheddar cheese

1 cup arugula

1 avocado, sliced

1 large tomato, sliced

4 tablespoons mayonnaise

1 tablespoon Dijon mustard

Marinate the Chicken: In a mixing bowl, combine the buttermilk, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight to maximize tenderness and flavor.

    Prepare the Breading: In another bowl, whisk together the flour, baking powder, cayenne pepper, and a pinch of salt. This will give you a flavorful and crispy coating for the chicken.

      Heat the Oil: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat. You can tell it’s ready when a drop of batter sizzles upon contact with the oil.

        Coat the Chicken: Remove the chicken from the marinade, shaking off any excess liquid. Dredge each piece in the flour mixture, pressing gently to adhere the flour to the chicken.

          Fry the Chicken: Carefully place the breaded chicken breast in the hot oil. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Once done, transfer the chicken to a paper towel-lined plate to drain excess oil.

            Toast the Buns: Slice the brioche buns in half and toast them lightly on a skillet or in a toaster until golden brown.

              Assemble the Sandwich: Spread 1 tablespoon of mayonnaise and ½ tablespoon of Dijon mustard on the bottom half of each bun. Place a piece of fried chicken on top, followed by a slice of cheddar cheese, a handful of arugula, 2-3 slices of avocado, and 1-2 slices of tomato. Top with the other half of the brioche bun.

                Serve: Serve your sandwiches immediately, paired with crispy fries or a simple side salad for a complete meal.
