Ingredients
  

2 cups mashed potatoes

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup chopped green onions

1/4 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs

Cooking spray or oil for frying

Instructions
 

In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.

    Using your hands, scoop the mixture and form it into small balls or patties.

      Roll each ball in breadcrumbs until fully coated, pressing gently to adhere the breadcrumbs.

        Heat oil in a frying pan over medium heat or preheat the oven to 400°F (200°C) if baking.

          If frying, cook the bites for about 3-4 minutes on each side until golden brown. If baking, place the bites on a greased baking sheet and bake for 20 minutes or until golden and crispy.

            Remove from heat, let cool slightly, and serve with your favorite dipping sauce.
