2 pounds frozen hash browns

1 cup sour cream

1 can cream of chicken soup

1 cup shredded cheddar cheese

1/2 cup butter, melted

1/2 cup chopped onions (optional)

1 cup cornflakes, crushed (for topping)

Salt and pepper to taste

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large mixing bowl, combine the frozen hash browns, sour cream, cream of chicken soup, shredded cheddar cheese, melted butter, and chopped onions (if using). Mix well until all ingredients are evenly distributed.

      Season with salt and pepper to taste.

        Transfer the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

          In a small bowl, mix the crushed cornflakes with a bit of melted butter. Sprinkle this mixture over the top of the hash brown mixture for a crunchy topping.

            Bake in the preheated oven for about 45-55 minutes, or until the top is golden brown and the casserole is bubbly.
