Ingredients
  

1 pound fresh asparagus, trimmed

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup toasted almonds, slivered

3 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Instructions
 

Bring a pot of salted water to a boil and prepare an ice bath in a large bowl.

    Add the asparagus to the boiling water and blanch for 2-3 minutes until bright green and tender-crisp.

      Immediately transfer the asparagus to the ice bath to stop cooking. After a few minutes, drain and pat dry.

        In a large bowl, combine the asparagus, cherry tomatoes, red onion, feta cheese, and toasted almonds.

          In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

            Pour the dressing over the salad and toss gently to combine.

              Serve immediately or refrigerate for up to 2 hours before serving for the flavors to mingle.
