Ingredients
  

4 cups fresh corn kernels (about 6-8 ears)

2 cups ripe tomatoes, chopped

1 cucumber, peeled and diced

1 red bell pepper, seeded and diced

1 small red onion, chopped

3 cloves garlic, minced

3 cups vegetable broth

2 tablespoons olive oil

2 tablespoons lime juice

Salt and pepper to taste

Fresh basil or cilantro for garnish

Instructions
 

In a blender, combine the fresh corn, tomatoes, cucumber, bell pepper, onion, and garlic. Blend until smooth.

    Add the vegetable broth, olive oil, and lime juice to the blender. Blend again until everything is well combined and smooth.

      Season with salt and pepper to taste, and blend for an additional 10 seconds to mix well.

        Chill the gazpacho in the refrigerator for at least 1 hour to allow the flavors to meld.

          Once chilled, serve in bowls garnished with fresh basil or cilantro.
