Ingredients
  

2 cups of cooked rice

1 lb chicken thighs, skinless and boneless

1 can of diced tomatoes (14.5 oz)

1 cup chicken broth

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, chopped

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

Heat olive oil in a large skillet over medium heat. Add chopped onions and bell pepper; sauté until softened.

    Stir in minced garlic and cook for another minute.

      Add chicken thighs to the skillet and season with cumin, paprika, black pepper, and salt. Brown the chicken on both sides for about 5-7 minutes.

        Pour in the diced tomatoes and chicken broth. Bring to a simmer.

          Reduce heat to low, cover, and let cook for about 20-25 minutes, or until chicken is cooked through and tender.

            Once the chicken is done, remove it from the skillet and shred it using two forks. Return shredded chicken to the skillet.

              Stir in the cooked rice and mix until well combined. Allow to heat through for an additional 5 minutes.

                Garnish with fresh parsley and serve warm.
