Ingredients
  

4 large russet potatoes

1 pound shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, chopped

1/4 cup cooked bacon, crumbled (optional)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and pierce them multiple times with a fork. Bake in the oven for about 45-60 minutes, or until tender.

    While the potatoes are baking, heat olive oil in a large skillet over medium heat. Add the shrimp and season with Cajun seasoning, salt, and pepper. Cook for about 3-4 minutes until the shrimp are pink and cooked through. Remove from heat.

      Once the potatoes are done, remove from the oven and let them cool for a few minutes. Cut them in half lengthwise and scoop out some of the insides to create space for the filling.

        Fill each potato half with cooked shrimp, then top with shredded cheddar cheese.

          Return the loaded potatoes to the oven for 5-10 minutes or until the cheese is melted and bubbly.

            Remove from the oven, add a dollop of sour cream on each, and sprinkle with green onions and crumbled bacon if desired.

              Garnish with fresh parsley and serve hot.
