Ingredients
  

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup milk

1 tsp vanilla extract

1 ½ tsp baking powder

¼ tsp salt

Red and blue food coloring

1 cup whipped frosting (store-bought or homemade)

1 cup Pop Rocks candy (various flavors)

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake pan with colorful cupcake liners.

    In a large bowl, cream together the softened butter and sugar until light and fluffy.

      Add in the eggs, milk, and vanilla extract, mixing until fully combined.

        In a separate bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Divide the batter into two bowls. In one bowl, add red food coloring until you reach your desired shade. In the other bowl, add blue food coloring.

              Drop spoonfuls of each colored batter into the cupcake liners, mixing slightly for a marbled effect.

                Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center comes out clean.

                  Let the cupcakes cool completely on a wire rack before frosting.

                    Frost each cupcake generously with whipped frosting, then sprinkle Pop Rocks generously on top right before serving for a fun pop and fizz!
