2 filet mignon steaks

Salt and black pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Season filet mignon steaks generously with salt and black pepper on both sides.

      In an oven-safe skillet, heat olive oil over medium-high heat.

        Sear the steaks for about 3-4 minutes on each side until browned.

          Transfer the skillet to the preheated oven and roast for about 5-7 minutes for medium-rare steaks.

            While steaks are cooking, in a saucepan over medium heat, whisk together heavy cream, Parmesan cheese, and Dijon mustard until smooth and creamy.

              Remove the steaks from the oven and let them rest for a few minutes.

                Serve filet mignon with creamy Parmesan mustard sauce drizzled over the top, garnished with fresh parsley.
