2 packs of instant ramen (any flavor)

2 chicken breasts, diced

4 cups chicken broth

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch ginger, grated

2 tablespoons soy sauce

1 tablespoon chili paste (adjust for spice level)

1 cup bok choy, chopped

2 green onions, sliced

Soft-boiled eggs (optional)

Sesame seeds for garnish

Instructions
 

In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.

    Add the diced chicken breasts and cook until they are no longer pink.

      Pour in the chicken broth and bring to a simmer.

        Stir in the soy sauce and chili paste, letting the broth simmer for about 5 minutes to meld flavors.

          Add the instant ramen noodles and cook according to package instructions, usually around 3-4 minutes.

            In the last minute of cooking, add the chopped bok choy to the pot.

              Serve hot, garnishing with green onions, soft-boiled eggs, and sesame seeds as desired.
