Ingredients
  

2 English muffins, split in half

4 large eggs

1/2 cup shredded cheese (mozzarella or cheddar)

1/2 cup cooked breakfast sausage or turkey bacon, chopped

1/4 cup bell peppers, diced

1/4 cup tomatoes, diced

1/4 cup green onions, sliced

Salt and pepper to taste

Olive oil or butter for greasing

Instructions
 

Preheat your oven to 375°F (190°C).

    Lightly grease a baking sheet with olive oil or butter.

      Place the English muffin halves on the baking sheet, cut side facing up.

        In a bowl, beat the eggs and season with salt and pepper.

          Pour a little of the beaten egg onto each muffin half, enough to cover the surface.

            Sprinkle cheese over the eggs on each muffin.

              Top with chopped sausage (or bacon), bell peppers, tomatoes, and green onions.

                Bake in the preheated oven for about 15-20 minutes, or until the eggs are set and the cheese is melted bubbly.

                  Remove from the oven and let cool slightly before serving.
