Ingredients

2 whole English muffins, split

4 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded mozzarella cheese

1/4 cup diced bell peppers (any color)

1/4 cup diced cooked ham (or bacon)

1/4 teaspoon garlic powder

1/4 teaspoon dried oregano

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the English Muffins: Place the split English muffins cut side up on a baking sheet. Lightly toast them in the oven for about 5 minutes, until they are just starting to brown.

Make the Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Add the Flavors: Stir in the garlic powder and dried oregano to the egg mixture for added flavor.

Cook the Eggs: In a non-stick skillet over medium heat, pour in the egg mixture. Cook, stirring gently, until the eggs are just set but still slightly runny (about 2-3 minutes). Remove from heat; they will continue to cook in the oven.

Assemble the Pizzas: Take the toasted English muffin halves and layer them with the cooked eggs. Next, sprinkle the diced bell peppers and ham over the eggs. Top generously with shredded mozzarella cheese.

Bake: Place the assembled breakfast pizzas back in the oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and let them cool for a minute. Garnish with fresh basil leaves if desired before serving.

Serve: Slice into halves or quarters and enjoy your delicious English Muffin Breakfast Pizzas hot!
