Ingredients
  

2 cups all-purpose flour

2 cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 cup buttermilk

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup mashed ripe bananas (about 2 bananas)

1 cup crushed pineapple, drained

1 cup shredded coconut

1 cup chopped walnuts (optional)

For the frosting:

1 (8 oz) package cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

      Add the eggs one at a time, beating well after each addition. Mix in the buttermilk and vanilla extract.

        In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Fold in the mashed bananas, crushed pineapple, shredded coconut, and walnuts (if using).

            Divide the batter evenly among the prepared cake pans.

              Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                For the frosting, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and spreadable.

                  Once the cakes are completely cooled, spread frosting between the layers and on top of the cake. Decorate as desired!
