Ingredients
  

2 boneless, skinless chicken breasts, sliced

1 medium zucchini, sliced into half-moons

1 cup mushrooms, sliced (button or cremini)

1 bell pepper, sliced (any color)

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon olive oil

Salt and pepper to taste

Optional: Sesame seeds for garnish

Optional: Green onions, chopped for garnish

Instructions
 

Heat the olive oil in a large skillet or wok over medium-high heat.

    Add the sliced chicken breasts to the skillet; season with salt and pepper. Cook until golden brown, about 5-7 minutes.

      Add minced garlic to the skillet, sauté for about 30 seconds until fragrant.

        Add the mushrooms and bell pepper; stir-fry for another 3-4 minutes until slightly softened.

          Toss in the zucchini and soy sauce; stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.

            Taste and adjust seasoning if necessary. Remove from heat.

              Serve immediately, garnished with sesame seeds and green onions if desired.
