Ingredients
  

2 boneless, skinless chicken breasts

1 ripe pineapple, peeled, cored, and cut into rings

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a bowl, mix together olive oil, soy sauce, honey, garlic powder, salt, and pepper to create a marinade.

    Place chicken breasts in a zip-lock bag and pour the marinade over them. Seal the bag and marinate for at least 30 minutes in the refrigerator.

      Preheat the grill to medium-high heat.

        Remove chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).

          During the last few minutes of grilling, add the pineapple rings to the grill and cook for about 2-3 minutes on each side until caramelized.

            Remove chicken and pineapple from the grill, let rest for a few minutes, then slice the chicken.

              Serve the grilled chicken with grilled pineapple, garnished with fresh cilantro if desired.
