1 pound fresh shrimp, peeled and deveined

1 cup fresh lime juice (about 8-10 limes)

1 medium red onion, finely diced

1 cup diced tomatoes (preferably Roma)

1/2 cup chopped fresh cilantro

1-2 jalapeño peppers, finely chopped (optional, adjust to taste)

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

Start by cooking the shrimp: Place the peeled and deveined shrimp in a pot of boiling water for about 2-3 minutes until they turn pink. Remove from heat and cool.

    Once cooled, chop the shrimp into bite-sized pieces and place them in a mixing bowl.

      Pour the lime juice over the shrimp and let it marinate for at least 30 minutes, allowing the citrus to 'cook' the shrimp.

        Add the diced red onion, tomatoes, cilantro, and jalapeños to the shrimp. Mix well to combine all ingredients.
