Ingredients

1 cup graham cracker crumbs

1/4 cup melted butter

2 cups cream cheese, softened

3/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh blueberries

1 tablespoon lemon juice

Instructions

In a mixing bowl, combine graham cracker crumbs and melted butter until well blended. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract; continue to mix until creamy.

In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold this into the cream cheese mixture.

Pour the cream cheese filling over the crust in the springform pan and smooth the top.

In a small saucepan over medium heat, cook blueberries with lemon juice. Once they begin to release their juices, mash gently with a fork and simmer for a few minutes.

Let the blueberry mixture cool slightly, then pour it over the cheesecake filling, spreading it out evenly.

Cover the cheesecake and refrigerate for at least 4 hours, or until set. Serve chilled and enjoy!
