Ingredients
  

4 boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 onion, chopped

1 bell pepper, chopped

1 cup chicken broth

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Chicken: In the bottom of your crock pot, place the chicken breasts. Season with salt and pepper.

    Add Vegetables: Layer the chopped onion and bell pepper over the chicken.

      Combine Other Ingredients: In a separate bowl, mix the black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Pour this mixture over the chicken and vegetables in the crock pot.

        Cook: Cover the crock pot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.

          Shred the Chicken: Once cooked, shred the chicken using two forks right in the crock pot and stir to combine all ingredients.

            Serve: Garnish with fresh cilantro and serve with lime wedges, over rice, or in tortillas.
