Ingredients
  

1 pound boneless, skinless chicken thighs, cut into bite-size pieces

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

4 cups chicken broth

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled

Juice of 1 lemon

Instructions
 

Cook the Chicken: In a large skillet or pot, heat 1 tablespoon of olive oil over medium heat. Season the chicken pieces with salt and pepper. Once the oil is hot, add the chicken and cook for about 5-7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for about 2-3 minutes until it becomes translucent. Stir in the garlic, diced bell pepper, and zucchini, cooking for another 3-4 minutes until tender.

      Add Tomatoes and Seasoning: Stir in the cherry tomatoes, oregano, basil, and red pepper flakes (if using). Cook for an additional 2 minutes until the tomatoes start to soften.

        Cook the Orzo: Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the orzo pasta. Reduce the heat to a simmer and cook uncovered for about 10-12 minutes, stirring occasionally, until the orzo is cooked and has absorbed most of the liquid.

          Combine Ingredients: Return the cooked chicken to the skillet. Stir well and let everything cook together for another 2-3 minutes to blend the flavors. If the mixture seems too dry, add a splash more broth or water.

            Finish and Serve: Remove from heat, and stir in the lemon juice, fresh parsley, and crumbled feta cheese. Adjust seasoning with salt and pepper as needed.

              Enjoy: Serve the Mediterranean chicken orzo warm, garnished with additional parsley and feta if desired.
