Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

Salt and pepper to taste

Red pepper flakes (optional)

Instructions

Cook the fettuccine according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes on each side. Remove the shrimp from the skillet and set aside.

In the same skillet, add the sun-dried tomatoes and heavy cream. Bring to a simmer, then reduce heat and stir in the Parmesan cheese until melted and smooth.

Return the shrimp to the skillet, add the cooked fettuccine, and toss everything together until well combined.

Stir in the chopped basil, and season with salt, pepper, and red pepper flakes if desired.

Serve hot, garnished with extra basil and Parmesan if desired.
