Instructions

Prepare the crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until combined. Press the mixture firmly into the bottom of a heart-shaped baking pan to form the crust.

Make the cheesecake filling: In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated and creamy.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form.

Fold the mixtures: Gently fold the whipped cream into the cream cheese mixture until just combined. Be careful not to deflate the whipped cream.

Layer the strawberries: Place a layer of sliced strawberries on top of the prepared crust. Pour the cheesecake filling over the strawberries, smoothing it out evenly.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight for the best set.

Glaze (if desired): If using the strawberry jelly, warm it slightly to make it spreadable, then brush over the top of the cheesecake just before serving.

Serve: Garnish with additional strawberries and fresh mint leaves before slicing into heart-shaped pieces to serve.
