Ingredients

1 lb ground pork (or ground chicken/turkey)

4 cups coleslaw mix (shredded cabbage and carrots)

2 cloves garlic, minced

1 tsp fresh ginger, minced (or ½ tsp ginger powder)

3 green onions, sliced

2 tbsp soy sauce (or coconut aminos for a low-carb option)

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp sriracha (optional, for heat)

Salt and pepper, to taste

Sesame seeds, for garnish

Instructions

Cook the Meat: In a large skillet over medium-high heat, add the ground pork. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).

Add Aromatics: Add the minced garlic and ginger to the skillet with the meat. Sauté for about 1-2 minutes until fragrant.

Stir in Coleslaw Mix: Add the coleslaw mix to the skillet. Stir well to combine with the meat and cook for another 3-5 minutes until the cabbage is slightly softened.

Season: Pour soy sauce, sesame oil, rice vinegar, and sriracha (if using) over the mixture. Stir well to ensure everything is coated evenly. Season with salt and pepper to taste.

Finish and Garnish: Once everything is heated through and the cabbage is tender, remove from heat. Stir in the sliced green onions. Serve hot, garnished with sesame seeds.
