Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh pineapple chunks (or canned)

1 bell pepper, sliced (Red or Yellow for a pop of color!)

1 medium red onion, sliced

½ cup BBQ sauce (Hawaiian-style if available)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat your grill to medium-high heat.

    Lay out two large pieces of aluminum foil, about 12x12 inches each.

      In a bowl, combine the chicken breasts, BBQ sauce, olive oil, salt, and pepper. Mix until the chicken is well coated.

        In the center of each foil piece, divide the chicken mixture, topping it with pineapple chunks, bell pepper slices, and red onion.

          Fold the foil over the chicken mixture to create a sealed packet, making sure no openings remain.

            Place the packets on the grill and cook for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).

              Carefully open the packets, letting steam escape, and garnish with fresh cilantro, if desired.
