Ingredients
  

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

2 teaspoons baking powder

½ teaspoon baking soda

1/3 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 cup buttermilk

1 ½ cups fresh or frozen blueberries

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda.

      In another bowl, mix together oil, egg, vanilla, and buttermilk until well combined.

        Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix!

          Fold in the blueberries gently.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake for 18-20 minutes or until a toothpick inserted comes out clean.

                Allow to cool for a few minutes before transferring to a wire rack to cool completely.
