Ingredients
  

1 lb dried black beans

4 cups water

1 onion, chopped

2 cloves garlic, minced

2 red bell peppers, diced

1 teaspoon ground cumin

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Rinse the black beans under cold water and remove any debris.

    In a large pot, combine the beans and water. Bring to a boil, then reduce the heat and simmer for about 60-90 minutes, or until beans are tender.

      In another skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.

        Add minced garlic and diced bell peppers to the skillet, cooking until the peppers are soft.

          Stir in the cumin, oregano, and bay leaf, cooking for another minute until fragrant.

            Once the beans are tender, drain them (if necessary) and add them to the skillet with the sautéed vegetables.

              Season with salt and pepper, mixing everything well. Let simmer for about 10-15 minutes to meld the flavors.

                Remove the bay leaf and garnish with fresh cilantro before serving.

                  Serve with lime wedges on the side for an extra kick of flavor.
