8 ounces fettuccine or penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cubed

1 tablespoon Cajun seasoning (adjust to taste)

1 bell pepper (red, yellow, or green), diced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for extra heat)

Instructions
 

Cook the Pasta: Start by boiling a large pot of salted water. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the cubed chicken. Season with the Cajun seasoning, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the diced bell pepper and onion. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and sauté for an additional 1 minute until fragrant.

        Create the Cream Sauce: Reduce the heat to medium and pour in the heavy cream and chicken broth. Stir well to combine and bring it to a gentle simmer. Allow it to cook for about 3-4 minutes until it starts to thicken slightly.

          Combine Everything: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together to coat the pasta and chicken in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Add Cheese: Stir in the grated Parmesan cheese until smooth and melted. Taste and adjust seasoning with salt, pepper, and additional Cajun seasoning if desired.
