2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

1 teaspoon lemon juice

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup buttermilk

Optional: Powdered sugar for dusting

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    In a medium bowl, toss the diced apples with lemon juice to prevent browning. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.

            Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with flour (flour, buttermilk, flour). Mix just until combined.

              Fold in the diced apples using a spatula, ensuring they are evenly distributed throughout the batter.

                Pour the batter into the prepared cake pan and smooth the top with a spatula.

                  Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

                      Optionally, dust the cooled cake with powdered sugar before serving for an elegant touch.
