Ingredients

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon Greek yogurt

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup Feta cheese, crumbled

½ cup tzatziki sauce

Fresh parsley, for garnish

Instructions

Marinate the Chicken: In a bowl, whisk together olive oil, red wine vinegar, Greek yogurt, minced garlic, oregano, smoked paprika, salt, and pepper. Add chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, shaking off excess. Grill or sear the chicken for about 5-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Let rest for a few minutes before slicing.

Assemble the Bowls: In a serving bowl, layer the cooked quinoa or rice at the bottom. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and crumbled feta cheese.

Add the Sauce: Drizzle the tzatziki sauce over the top generously. Garnish with fresh parsley.

Serve and Enjoy: Serve the bowls warm, mixing the ingredients together in every bite for a flavor explosion.
