Ingredients
  

1 cup orzo pasta

2 boneless, skinless chicken breasts

1/2 cup sun-dried tomatoes, chopped

2 cups spinach, fresh

1/4 cup feta cheese, crumbled

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

2 cups chicken broth

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the orzo pasta according to package instructions. Drain and set aside.

    In a large skillet, heat olive oil over medium heat.

      Season the chicken breasts with salt, pepper, and oregano.

        Add the chicken to the skillet and cook for about 6-7 minutes on each side, until fully cooked. Remove and let it rest before slicing.

          In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 2 minutes.

            Pour in the chicken broth and bring to a simmer.

              Stir in the fresh spinach and cooked orzo, mixing until the spinach wilts.

                Slice the rested chicken and place it on top of the orzo mixture.

                  Sprinkle crumbled feta cheese on top and garnish with fresh basil if desired.

                    Serve hot and enjoy your delicious, healthy meal!
