Ingredients
  

1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Food coloring (pastel colors for Easter)

Instructions
 

In a medium bowl, combine the crushed graham crackers and melted butter, mixing well.

    Press the mixture into the bottom of mini cheesecake cups or a muffin tin to form the crust.

      In a large mixing bowl, beat the cream cheese until smooth, then add in the powdered sugar and vanilla extract, mixing until well combined.

        In another bowl, whip the heavy cream until stiff peaks form.

          Gently fold the whipped cream into the cream cheese mixture until combined.

            Divide the mixture evenly among the crusts, smoothing the tops with a spatula.

              Add food coloring to the cheesecake mixture to create pastel layers or swirls with a toothpick for a decorative effect.

                Refrigerate for at least 4 hours or until set.
