4 boneless, skinless chicken breasts

1 cup uncooked basmati rice

2 cups chicken broth

1 medium cucumber, grated and drained

1 cup plain Greek yogurt

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon dried dill

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Rice: In a large baking dish, spread the uncooked basmati rice evenly across the bottom.

      Add Broth and Seasoning: Pour the chicken broth over the rice. Add salt and black pepper, and stir until the rice is evenly seasoned.

        Season the Chicken: In a small bowl, combine olive oil, minced garlic, dried dill, and lemon juice. Brush the mixture over the chicken breasts, ensuring they are well coated.

          Arrange the Chicken: Place the seasoned chicken breasts on top of the rice in the baking dish.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 35-40 minutes, or until the chicken is fully cooked and the rice is tender.

              Make the Tzatziki Sauce: While the chicken and rice are baking, prepare the tzatziki sauce. In a bowl, combine the grated cucumber, Greek yogurt, 1 tablespoon lemon juice, additional minced garlic, and dill. Season with salt to taste and mix well.

                Serve: Once the chicken is cooked, remove the dish from the oven. Fluff the rice with a fork, then top the chicken with a generous scoop of tzatziki. Garnish with fresh parsley if desired.
