1 cup all-purpose flour

1/2 cup honey

1/2 cup brown sugar

1/4 cup unsalted butter, softened

1 large egg

1/2 cup orange juice (freshly squeezed)

Zest of 1 orange

1 tablespoon freshly grated ginger

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

    In a large mixing bowl, cream together the softened butter and brown sugar until fluffy.

      Add the honey and mix until combined.

        Beat in the egg, followed by the orange juice and orange zest.

          In a separate bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and grated ginger.

            Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

              Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.

                Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the cakes to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
