Ingredients
  

1 ½ cups of all-purpose flour

½ cup of unsalted butter, softened

¾ cup of granulated sugar

1 tsp baking powder

¼ tsp salt

2 large eggs

1 cup of diced rhubarb

1 cup of milk

1 tsp vanilla extract

¼ cup of cornstarch

½ cup of confectioners' sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.

    In a mixing bowl, combine flour, softened butter, granulated sugar, baking powder, and salt until crumbly.

      Press the mixture firmly into the bottom of the prepared baking dish to form the crust.

        In another bowl, whisk together the eggs, milk, vanilla extract, and cornstarch until smooth.

          Gently fold in the diced rhubarb.

            Pour the rhubarb mixture over the crust in the baking dish.

              Bake for 35-40 minutes or until the center is set and the top is lightly golden.

                Let it cool completely before cutting into bars.

                  Dust with confectioners' sugar before serving for an extra touch of sweetness!
