Ingredients
  

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

1/3 cup granulated sugar

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

1 ½ cups rhubarb, diced

8 oz cream cheese, softened

1 cup powdered sugar

1 large egg

1 tsp lemon juice

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.

    In a bowl, mix the flour, softened butter, granulated sugar, vanilla extract, baking powder, and salt until combined.

      Press this mixture into the bottom of the prepared pan to form a crust.

        In another bowl, beat the softened cream cheese and powdered sugar together until smooth.

          Add in the egg and lemon juice, mixing until fluffy.

            Spread the cream cheese mixture over the crust.

              Evenly distribute the diced rhubarb on top of the cream cheese layer.

                Bake for 35-40 minutes or until the edges are golden and the center is set.

                  Allow to cool before slicing into bars.
