8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup diced pimentos (drained)

1/4 cup mayonnaise

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp cayenne pepper (optional for heat)

1 cup crushed crackers or breadcrumbs (for coating)

Instructions
 

In a large mixing bowl, combine the softened cream cheese, shredded sharp cheddar, shredded Monterey Jack, diced pimentos, mayonnaise, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).

    Mix together until well combined and creamy. You can use a hand mixer or a spatula for this step.

      Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.

        Once chilled, scoop out small portions of the mixture and roll them into balls.

          Roll each ball in the crushed crackers or breadcrumbs until fully coated.

            Place the finished pimento cheese bites on a serving tray.

              Serve immediately or keep refrigerated until ready to serve.
