4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 2 fresh lemons

Zest of 1 lemon

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon honey (optional)

Lemon slices (for grilling and garnish)

Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, pepper, and honey. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for maximum flavor.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on medium heat on the stovetop.

      Prepare Lemon Slices: While the grill is heating, slice the remaining lemon into rounds. You can grill these alongside the chicken for extra flavor.

        Grill the Chicken: Once the grill is hot, remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken breasts on the grill. Cook for about 6-7 minutes on one side, then flip and grill for an additional 6-7 minutes or until the internal temperature reaches 165°F (74°C).

          Grill the Lemon Slices: During the last few minutes of cooking, add the lemon slices to the grill. Grill them for about 2-3 minutes on each side until caramelized and slightly charred.

            Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes. Serve the grilled chicken with the lemon slices on the side for an extra burst of flavor.
