The first step in crafting a flavorful potsticker soup is preparing the broth. A well-developed broth sets the stage for the entire dish, and sautéing fresh garlic and ginger is integral to this process. Begin by heating a large pot over medium heat and adding a splash of cooking oil. Once the oil is hot, add minced garlic and ginger, allowing them to sizzle for about 30 seconds until fragrant. This step unlocks the essential oils in the garlic and ginger, creating a robust foundation for your broth.

Ingredients

1 cup potstickers (homemade or frozen)

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 cup bok choy, chopped

1 cup mushrooms, sliced (shiitake or button)

1 carrot, julienned

2 green onions, chopped

1 tablespoon fresh cilantro, chopped (optional)

Salt and pepper, to taste

Chili oil or flakes (optional, for spice)

Instructions

Prepare the Broth: In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, stirring for about 1 minute until fragrant.

Add Ingredients: Pour in the chicken or vegetable broth, soy sauce, and bring to a gentle simmer. Add the sliced mushrooms and carrots, cooking for about 5-7 minutes until vegetables are tender.

Cook the Potstickers: Gently place the potstickers into the simmering broth. If using frozen potstickers, allow them to cook for 8-10 minutes. Fresh potstickers will need about 4-6 minutes. Ensure they’re cooked thoroughly.

Add Bok Choy: Stir in the chopped bok choy and cook for an additional 2-3 minutes until wilted and tender.

Season the Soup: Taste and adjust seasoning with salt, pepper, and chili oil or flakes if desired for an added kick.

Garnish and Serve: Ladle the soup into bowls, garnishing with chopped green onions and cilantro if using. Serve hot and enjoy!
