Ingredients
  

2 cups elbow macaroni

1 cup mayonnaise

1 teaspoon Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon sugar

1 cup canned pineapple chunks, drained

1 cup diced ham or spam

½ cup diced red bell pepper

½ cup finely chopped green onions

½ cup shredded carrots

Salt and pepper to taste

Instructions
 

Cook the elbow macaroni according to package instructions until al dente. Drain and rinse with cold water to cool.

    In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and sugar. Stir until well mixed.

      Add the cooled macaroni to the mayonnaise mixture and stir to coat completely.

        Gently fold in pineapple chunks, diced ham or spam, red bell pepper, green onions, and shredded carrots.

          Season with salt and pepper to taste. Mix well.
