Ingredients
  

1 pound shrimp, peeled and deveined

1 pound smoked sausage, sliced (such as Andouille)

1/2 cup vegetable oil

1/2 cup all-purpose flour

1 large onion, diced

1 bell pepper, diced

2 stalks celery, diced

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

4 cups chicken broth

2 cups okra, sliced (fresh or frozen)

2 tablespoons Cajun seasoning

Salt and pepper to taste

2 bay leaves

Fresh parsley, chopped (for garnish)

Cooked rice (for serving)

Instructions
 

In a large pot, heat vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it turns a dark brown color, about 20-30 minutes.

    Add the onions, bell pepper, celery, and garlic to the roux. Cook until the vegetables are soft, about 5 minutes.

      Stir in the sliced sausage and cook for another 5 minutes until the sausage is browned.

        Add the diced tomatoes, chicken broth, okra, Cajun seasoning, bay leaves, salt, and pepper. Bring to a simmer.

          Add the shrimp and cook until they are pink and cooked through, about 5 minutes.

            Remove the bay leaves before serving. Serve over cooked rice and garnish with fresh parsley.
